321 stainless steel sheet performs better than 304 in high-temperature service above 500°C because its titanium stabilisation prevents sensitisation and intergranular corrosion. 304 has no titanium, so it is more likely to form carbides when held at high temperatures. For everyday room‑temperature applications, 304 is usually the more cost‑effective choice.

321 stainless steel sheet is preferable for continuous service at high temperatures up to 900°C, as its titanium-stabilised structure provides more reliable heat resistance. In contrast, 316 sheet delivers better performance in chloride-rich and marine environments thanks to its 2.00–3.00% molybdenum content. The best choice ultimately depends on whether high-temperature resistance or chemical (corrosion) resistance is more important for the application.
